Ingredients
- 3-to-1 water to sugar and lemon ratio (i.e. 3 cups water to 1 cup sugar and 1 cup lemon juice)
- Lemon zest
- Fresh Mint (optional)

Preparation
Step 1
Combine the sugar and water in a pot.
Step 2
Simmer while continually stirring, to completely dissolve the sugar in the water.
Step 3
Cool to room temperature.
Step 4
Cover and chill in the fridge.
Step 5
Squeeze the lemons into the chilled sugar water.
Step 6
Grate in some lemon zest.
Step 7
Freeze until it begins to crystalize.
Step 8
Scrape and stir the ice crystals and freeze it again.
Step 9
If you’re feeling really fancy, garnish with a sprig of fresh mint.
