Mama's Broccoli Salad
When I was growing up I remember my mama making this delicious broccoli salad, it's the perfect summer salad, I will always remember her in the kitchen sneaking some turkey bacon, then putting some in the salad! It's the perfect picnic salad for parties healthy and delicious

Ingredients
- 4 1/2 cups fresh broccoli florets, chopped into bite-sized pieces
- 1 cup shredded cheddar cheese
- 6-8 turkey bacon strips, cooked and crumbled
- 1/2 cup raisins
- 1/2 - 1 tsp. minced red onion {to taste}
- 1/2 cup light mayonnaise
- 3 tbs. vinegar
- 2 tbs. sugar or Splenda

Preparation
Step 1
1. In a bowl, combine broccoli, cheese, bacon and raisins.
Step 2
2. In a separate bowl, whisk together mayonnaise, onion, vinegar and sugar.
Step 3
3. Pour dressing over broccoli mixture and toss to coat.
Step 4
Cover and refrigerate for at least 1 hour.Toss before serving.enjoy

INGREDIENTS
- Peanuts
- Carrot
- Mango
- Rocket
- 2 limes
- Olive oil
- Soy sauce
- Red onion, minced
- Salt
- Pepper
METHOD
- Lightly sautée the peanuts until golden.
- Take the carrots and cut into thin slices.
- Peel the mango and slice into thin strips.
- Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
- In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
- Enjoy!
