Sautéed Lamb with Garlic

- 1 tablespoon olive oil
- 1.5 lbs boneless lamb shoulder, cut into
- cubes
- 1 tbs butter
- 1 cup breadcrumbs
- 3 cloves garlic, chopped
- 2 cups fresh parsley,
- 2 cups defatted chicken broth.

Preparation
Step 1
Put oil in a pan to heat. Brown the meat on all sides, without letting it roast. Remove meat from heat and reserve it in a dish.
Step 2
In saucepan, melt butter, add bread crumbs and let brown, stirring. Add meat and stir to coat well with breadcrumbs. Mix garlic and parsley and then pour into the pan. Add stock and simmer over low heat for 45 minutes, stirring occasionally so the meat is evenly coated in breadcrumbs and parsley. If you want more sauce, add a little water. The connection will be automatic with the breadcrumbs.
