  • 8-9 lb cured ham
  • 1 large bouquet garni
  • 3 onions pricked with 5 cloves
  • 3 large carrots
  • 1 handful of peppercorns

Preparation

Step 1

Soak ham for 8 hours in cold water that you change every 2 hours. Then place the ham in a pot with all other ingredients and cover with cold water. Bring to a boil, and carefully watch to make sure there is always water covering the ham.

Step 2

It takes about 20 minutes per pound to cook, but the only infallible test of doneness is when the small bone on the side of the ham can be easily removed by hand. Allow the ham to cool in the ham water, if you want to eat it cold, go ahead and enjoy! Otherwise reheat desired amount to your liking.
