Tapioca with Saffron

Ingredients

  • 6 glasses
  • 1 1/2 cups of hot water
  • 1 cup of green tea prepared in advance brewed, filtered and still hot
  • some saffron
  • 2.5 oz small tapioca pearls
  • 2/3 cup caster sugar
  • Fresh whipped cream and unsalted pistachios for garnish.

Preparation

Step 1

In a large bowl, brew green tea with saffron. In a large saucepan, bring water and beads to cook, add the sugar, stirring with a wooden spoon. Cook for fifteen minutes over medium heat, stirring all the time so it does not stick.

Step 2

Add green tea with threads of saffron and cook for another 5 minutes until it thickens and the pearls are translucent and very swollen. Leave the mixture in glass jars, 1 hour or two. Cool and then just before serving, garnish the glasses with a cloud of whipped cream and pistachios, Treat yourself.
