Halloween Soufflé

- 1 lb peeled pumpkin
- 3 1/2 tbsp butter
- 1/2 cup flour
- 3 eggs
- scant 1 1/2 cup milk
- 1/2 cup grated cheese

Step 1
Preheat oven to 410 °
Cook pumpkin cut into pieces with steam. In a pressure cooker for 20 minutes.
Prepare a white sauce by melting butter, add flour all at once, stirring to avoid lumps, add milk gradually, stirring as you go. When the mixture is ready add salt and pepper. Remove from heat and add the 3 egg yolks and stir.
Beat the egg whites until stiff with a pinch of salt.
Step 2
Meanwhile, mash the cooked pumpkin and mix with white sauce and add cheese. When it is well blended, add the beaten whites to the mixture. Fold in gently to avoid breaking the whites.
Butter a baking dish and pour in the mixture. Bake for 50 minutes. Bon appetit ...
