Chorizo and Peppers Wraps

- 4 flour tortillas
- 3 peppers
- 1 onion
- 24 thin slices of chorizo
- 4 oz cream cheese
- 1 jar of tomato confit or stewed tomatoes
- sugar
- salt
- pepper
- olive oil
- herbes de provence

Preparation
Step 1
Wash peppers and cut into strips. Cut the onion and dice small. Heat olive oil in a pan and sauté the onion for 5 minutes. Add the peppers and season with salt, pepper, and 2 good tablespoons of sugar. Cook over low heat about thirty minutes.
Step 2
To prepare the wraps, put a thin layer of cream cheese over the tortilla, then put a layer of tomatoes (confit or stewed). Then place the slices of chorizo so as to cover almost the entire surface, then add over one quarter of prepared vegetables. Roll the tortilla over itself.
Step 3
Cut into slices for appetizers, or in two for one person. Use toothpicks for the appetizers. Do the same for all 4 tortillas.
