Salmon in Puff Pastry

- 1 puff pastry
- 2 salmon steaks
- 1 carrot
- 1/2 onion
- 1 leek
- 1 tomato
- 1 clove of garlic
- scant 1/2 cup heavy cream
- 1 egg yolk

Step 1
Preheat oven to 375 ° F
Sauté onion in a skillet with a little olive oil. Then add the leek, carrot, tomato and garlic all cut into small pieces. Add the cream and pepper and reduce over low heat for 20 to 30 minutes.
Step 2
Cut the puff pastry in half. Arrange a layer of vegetables, then the salmon and cover with another layer of vegetables. Close the pastry by pinching the edges well (to avoid anything falling out during cooking).
Step 3
Using a brush (or finger if you do not have a brush), brush the pastry with egg yolk (which will create a nice color).
Step 4
Bake 30 minutes in a hot oven.

These fun Tropical Salmon Sushi Cups make the perfect warm-weather appetizer!
Ingredients
- 1/2 cup rice vinegar
- 2 tbsp sugar
- 2 cups cooked sushi rice
- 1 cup soy sauce
- 1/4 cup chopped cilantro
- 2 tbsp seasame oil
- 1 tsp chili paste
- Salt
- 1 mango, diced
- 1 avocado, diced
- 1 lb salmon, diced
Method
- Combine the rice vinegar and sugar.
- Stir though the cooked sushi rice, and with wet hands, shape into balls.
- Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
- Refrigerate for 15 minutes.
- In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
- Combine the mango, avocado and salmon.
- Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
- Remove the rice cups from the refrigerator, and peel off the parchment paper.
- Distribute the salmon mixture between the rice cups.
- Garnish, serve and enjoy!
