  • generous 3/4 cup whole cream
  • 8 oz mascarpone
  • 1 vanilla bean
  • 4 tablespoons brown sugar
  • 1 tsp agar agar

Preparation

Step 1

In a saucepan, add cream, mascarpone, sugar, vanilla bean, (split in half and seeds scraped). Heat gently to melt the mascarpone. Bring to a boil.

Step 2

When the first bubble forms, pour the agar and stir well while maintaining the boil 1 minute. Remove the vanilla pod, dry it and put in a pot with sugar to flavor it. Pour into ramekins. Let cool before placing in the refrigerator at least 3 hours.
