Ingredients

  • 4 large or 6 medium scallops
  • 4 oranges
  • 1 tbsp mustard
  • 1 shallot
  • 2 tbsp butter
  • Salt, white pepper

Preparation

Step 1

Peel and mince the shallot.

Squeeze the oranges juice into a pan and boil.

Add the shallot

Cook and filter.

Step 2

Cut the scallops into 4 slices (3 if they are small).

Step 3

In a small saucepan, bring juice to a simmer, season with salt and white pepper, then place the slices of scallops in the liquid.

Step 4

When the liquid starts to simmer again, turn off the heat, add butter, stirring the pot to encourage emulsification. Add mustard.

Step 5

Adjust seasoning and assemble in a glass.
