Ingredients

- 2 large eggplants
- 2/3 cups tahini
- 1/2 of an onion
- 2 garlic cloves
- 2 TBS lemon juice
- 1/2 cup parsley
- 1 1/2 TBS Bourbon Smoked Salt
- 2 TBS Bourbon Smoked Pepper
- 2 tsp Bourbon Smoked Paprika (plus more for garnish)
Preparation
Step 1
Grill whole eggplants and onion for about 15 minutes (turning occasionally). If you don't want to grill, you can also cook the eggplant and onion on a stove top. When the eggplant is cool, peel off the skin. Chop eggplant and onion into cubes, and put both into a food processor. Process for 1 minute. Scrape down the sides and add all other ingredients. Garnish with olive oil and Bourbon Smoked Paprika and serve with pita chips!
