Chicken Fried Steak

Ingredients
- 1.5 lb beef round or rump steak
- 1 cup flour
- 2 tsp black pepper
- 1 1/2 tsp salt
- 3/4 tsp ground red pepper
- 1/4 cup milk
- 1 egg
- 1/4 cup vegetable oil

Preparation
Step 1
1. Take meat and pound with a meat cleaver until 1/3 inch thick. Cut into four serving pieces.
Step 2
Mix in a shallow bowl 1 cup flour, 2 tsp black pepper, 1 1/2 tsp salt, and 3/4 tsp ground red pepper. In a second bowl, whisk together 1/4 cup milk and 1 egg.
Step 3
Coat each steak with the seasoned flour, dip into the egg mix, coat with seasoned flour again, and shake off any excess. Let dry on a rack for 15 minutes.
Step 4
Heat 1/2 inch of oil in a large heavy skillet over medium high heat. Add the steaks and fry, turning once, until golden brown- 2-3 minutes each side.
Step 5
Use dripping from steaks to make gravy. Put drippings over heat and add onion. Cook for 5 minutes. Add 2 tbsp flour and cook an additional 2 to 3 minutes. Stir in 1 cup milk and bring to a boil. Reduce heat and simmer until thick, about 3 to 5 minutes. Add salt and pepper to taste. Serve over steaks.
