- one cup of minute rice
- half stick margarine
- 1/2 onion: chopped
- 1 can cream of mushroom soup
- can of water
- 4 ounces of Velveeta cheese
- 2 large chopped chicken breasts: cooked
- 1 package broccoli
- 1 package spinach

Step 1
put one cup of minute rice in greased dish
Step 2
In a sauce pan sauté:
margarine
onion
Step 3
Add:
one can cream of mushroom soup
can of water
Velveeta cheese
chopped chicken
broccoli
spinach

Stir until ingredients are well incorporated
Step 5
Pour hot mixture over rice
Step 6
Bake at 350° for 30 to 45 minutes

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
