Modified Smith Island Crabcakes

Ingredients

  • 1 lb special crab meat
  • 1 lb claw crab meat
  • 2 eggs
  • 2 tbl Dijon Mustard
  • 1 tbl Old Bay Seasoning
  • 3 tbl Mayonaise
  • Fresh saltine crackers
  • Salt and pepper to taste
  • Butter and oil for frying

Preparation

Step 1

Mix first 6 ingredients, Roll into balls, about the size of a small plum

Step 2

In a gallon size freeze bag dump one sleeve of saltines, close bag and with rolling pin crush the crackers none any larger than a pea. Put on a plate

Step 3

Heat up skillet, melt butter and add oil . heavy coating in pan.

Step 4

Roll the balls of crab meat mixture in the crackers and place in the pan. Do not place them to close because now you will mash them into a patty shape.

Step 5

Fry until golden brown About 5 min per side
