Preparation
Step 1
Slice or dice cucumbers.
Step 2
Wisk all the other ingredients in a med. bowl with a fork or a wisk.
Step 3
Pour the mixture over the cucumbers and stir well.
Step 4
Let set in fridge for at least 10 minutes, then serve.
The longer you let sit in fridge, the more flavorful the cucumbers get. I usually let them sit in fridge for about an hour or so.

INGREDIENTS
- Peanuts
- Carrot
- Mango
- Rocket
- 2 limes
- Olive oil
- Soy sauce
- Red onion, minced
- Salt
- Pepper
METHOD
- Lightly sautée the peanuts until golden.
- Take the carrots and cut into thin slices.
- Peel the mango and slice into thin strips.
- Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
- In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
- Enjoy!
