Amish Friendship Bread - Lighter and Healthier Bread

Ingredients

  • 1 cup Amish Friendship Bread Starter
  • 3/4 cup egg substitute
  • 1/2 cup apple sauce
  • 1/2 cup pumpkin puree
  • 1/2 cup skim milk
  • 1 cup sugar
  • 2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/2 cup chopped craisins (optional)
  • 1/2 cup mini chocolate chips (Optional)

Preparation

Step 1

Day 1 - Do nothing
Day 2 - Mush the Bag
Day 3 - Mush the Bag

Step 2

Day 6 - Add to the bag: 1 cup flour, 1 cup sugar, 1 cup milk. Mush the Bag

Step 3

Day 7 - Mush the Bag
Day 8 - Mush the Bag
Day 9 - Mush the Bag

Step 4

Day 10 - Preheat oven to 325. Spray 2 medium loaf pans or 4 mini loaf pans with light olive oil.

Step 5

Combine Ingredients. Pour batter evenly into the pans.

Step 6

Bake for 45 to 60 minutes until wooden toothpick comes out clean.

Step 7

Cool for 5 minutes and turn onto a baking rack to finish cooling.

If you keep a starter for yourself, you'll be baking every 10 days. The bread is very good and makes a good gift. Only the Amish know how to create a "starter" so if you give them all away you will have to wait until someone gives one back to you.
