Fried Tomato Gravy

Fried Jersey tomatoes blended with a flour mixture. Then served over toast or boiled potatoes.
Ingredients
- 6 firm, but ripe Jersey tomatoes
- 1 Cup flour, approximately
- Salt and pepper to taste
- Sugar
- Vegetable oil
- 6 Tablespoons flour
- 2 Cups of milk

Step 1
Cut tomatoes in thick slices. Mix 1 cup flour with salt and pepper. Coat tomatoes with flour mixture. Place slices in oil over medium heat. Saute on one side, sprinkle with flour mixture and turn. Saute on other side and remove most most of tomatoes from pan while still firm to a warm dish. Cook the rest of the tomatoes until mushy. Chop in the pan with a spatula. Add additional flour and stir to cook a few minutes. Add milk and stir until thickened. Serve gravy over bread or boiled potatoes with the slices on the side. Serves 4-6.

Ingredients
- Pizza Dough (homemade or store bought)
- Shredded cheese
- Pizza sauce
- Cured ham, shredded
- 4 eggs
- Cherry tomatoes
- Fresh basil
Method
- Roll out the dough
- Use a small bowl to cut the dough into rounds
- Add shredded cheese
- Place in oven on an oven tray afr 10 min at 355°F
- Put each dough round into a ramekin
- Add 1 tbsp pizza sauce, a handful of shredded cured ham
- Break an egg into each pizza
- Top with sliced cherry tomatoes and a basil leaf
- Place in oven for another 15 mins at 355°F
- Garnish with parsley and a pinch of pepper
- Serve and enjoy!
