Gluten Free Cinnamon Buns

Ingredients
- Dough:
- 2 Tbsp butter
- 1/4 cup white sugar
- 2/3 cup milk (room temperature)
- 1 Tbsp yeast (instant)
- 1 egg
- 1/4 cup oil
- 1/2 cup potato starch
- 1 cup cornstarch
- 1/4 tsp baking soda
- 2 1/2 tsp Xanthum gum
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- Filling:
- 1 cup brown sugar
- 1 1/4 tsp cinnamon (sometimes more depending on preference)
- Glaze:
- 3/4 cup icing sugar
- 1 tsp vanilla extract
- milk to thicken

Preparation
Step 1
Preheat oven to 375.
Step 2
Combine butter and sugar, mix well (cream).
Step 3
Add yeast to measuring cup of milk. Whisk until fully dissolved (make sure milk is warm). Add milk/yeast mixture to sugar.
Step 4
Add remaining ingredients, mixing very well removing all lumps.
Set aside dough.
Step 5
Set out a piece of plastic wrap (about 13x13). Sprinkle white sugar on wrap, lay dough on top and then put another two sheets of plastic wrap on top. Roll into about 13x13 square of dough. (want it to be thin enough to make more rolls.)
Step 6
Remove top piece of wrap, sprinkle brown sugar/cinnamon mixture on top, leave about one inch space from edges.
Step 7
Use bottom piece of wrap, lifting the bottom to roll it without touching with hands.
Step 8
Start cutting pieces (about 8-9).
Step 9
Grease pan with butter, place rolls in pan. Bake for 20 minutes or until tops are lightly browned.
Step 10
Combine powdered sugar, vanilla and milk to make glaze, stir until lumps are dissolved and drizzle over cooked rolls.
