This seitan can be used in most recipes that call for some kind of meat. When adding the seitan to a recipe, use some of the spices in the other recipe to help the meal be more cohesive.

Ingredients

  • 1/4 cup wheat flour
  • 1/4 cup wheat gluten
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 cup nutritional yeast
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tbsp brown sugar
  • 1/4 tsp baking soda
  • 1 tbsp sesame oil
  • 1/2 cup balsamic vinegar
  • 1 tsp liquid smoke
  • 1/4 cup soy sauce
  • Water as needed

Preparation

Step 1

Combine dry ingredients. Add wet ingredients. Stir in water slowly until the dough is thick but not dry.

Step 2

Let rise 5 hours. Shape into golf balls.

Step 3

Steam balls 10 minutes. Bake 30 minutes at 350*F.

Step 4

When using the seitan use as is, shredded into chunks, or browned in a frying pan.
