Ingredients

  • 3/4 cup graham cracker crumbs
  • 1 tbsp sugar
  • 2 tbsp unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 3 tbsp granulated sugar
  • 12 ounces fresh pineapple, pureed
  • 1/2 tsp pure vanilla extract
  • 1 (8 ounce) tub frozen whipped topping, thawed
  • whipped topping, optional

Preparation

Step 1

In a bowl, mix the graham cracker crumbs, sugar and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.

Step 2

In a larger bowl, with an electric mixer, mix the cream cheese and sugar on medium-high until creamy, 3 minutes. Add in pineapple and vanilla and mix. Using a spatula, fold in the whipped topping until well combined.

Step 3

Evenly pipe the filling into individual serving dishes. Cover with wrap and chill for 3 hours before serving.

Step 4

Garnish with whipped topping and fresh pineapple.
