Spagetti Sauce

Can be made in a crock pot and slow simmered all day. Best made using grandma's canned tomatoes.
Ingredients
- 1 lb ground beef, browned and drained if not lean
- Olive oil for frying
- 1 onion, chopped
- 1 clove garlic, chopped
- 2 stalks celery, chopped
- 1 can mushroom pieces and stems, or 6-8 fresh mushrooms
- 1 - 2 large cans or jars tomatoes, chopped or pureed
- Basil to taste
- Oregano to taste
- Salt and pepper
- 1 small can tomato paste
- Hot sauce to taste

Preparation
Step 1
Soften onion and garlic in olive oil, add ground beef and break up while frying. Add salt and pepper. Drain if needed. Add celery and mushrooms, continue frying and stirring.
If using slow cooker, transfer to it, or to large dutch oven pot. Add canned tomatoes and simmer.
Step 2
Add basil and oregano and hot sauce if using, to taste. Simmer as long as you like to develop flavours. I sometimes add red wine, and you can replace the beef with shrimp. Add the tomato paste about 15 minutes before serving.
