Ingredients
- 4 Green Bell Peppers - Halved Lengthwise with Ribs and Seeds Removed
- 3 Tbsp. Olive Oil
- Salt & Pepper
- 1/2 cup Quinoa
- 1 lb. Ground Pork
- 8 Cloves Garlic - Sliced
- 1 cup Tomato Sauce
- 4 tsp. Smoked Sweet Paprika
- 3 oz. Feta - Crumbled

Preparation
Step 1
Preheat oven to 375. Rub the peppers with 2 Tbsp. oil and season with salt & pepper. Arrange the peppers, cut side down, on a rimmed baking sheet, and bake for 10 minutes. Cook the quinoa according to package directions.
Step 2
In a large skillet, heat 1 Tbsp. olive oil over medium heat. Add the pork and garlic and cook about 6 minutes. Stir in the cooked quinoa, tomato sauce and paprika; season.
Step 3
Spoon the filling into the peppers and bake about 20 minutes. Sprinkle with feta.
