Doc's Santa Fe Fajitas

Ingredients

  • 6 Tbsp soy sauce
  • 2 Tbsp lime juice
  • 2 Tbsp chopped cilantro
  • 2 lbs Med shrimp , peeled and deveined
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 large purple onion
  • 1 Tsp vegetable oil
  • Flour tortillas

Preparation

Step 1

Mix together soy sauce and limejuice and pour over shrimp in large plastic bag or bowl.
Marinate in refrigerator 1 hour.

Step 2

In a large skillet or wok, cook bell peppers and onion in hot oil over high heat for 5 minutes, stirring constantly.

Step 3

Remove vegetables.

Step 4

Add shrimp and marinade to skillet.
Cook about 2 minutes until shrimp are pink.

Step 5

Return vegetables to pan and heat through.

Step 6

Serve with flour tortillas.
