Dessert- Sticky Date Pudding

Ingredients
- 250g dates
- 1 tsp baking soda
- 1 tsp fine grated ginger
- 2 eggs
- 1/2 cup sugar
- 3 tbsp butter
- 1 1/2 cups self rising flour
- 1/2 cup chopped pecans
- 1 tsp mixed spice
- 1/4 tsp ground cloves
- 1 tsp ground cinnamon
- Sauce
- 1/2 cup butter
- 1 cup brown sugar
- 1/4 cup golden syrup
- 1 cup cream

Preparation
Step 1
Soak dates in 1 cup of boiling water with ginger and baking soda, set aside
Step 2
Beat butter and sugar, add eggs one at a time and beat them in.
Mix dry ingredients in a medium bowl
Fold the dry ingredients and the soaked dates into the egg mixture
Step 3
Pour into greased pan and
bake in a preheated oven of 325• until golden
Step 4
Sauce: in a saucepan melt butter and add sugar, allow to cook for a minute. Add syrup and cream and allow it to come to a boil. Set aside.
Step 5
Serve hot or cold
Garnish with whipped cream, ice cream or custard.

Chef Tips and Tricks
These salted caramel thumbprint cookies are easy to make and super delicious!
INGREDIENTS:
- 1/4 cup / 50g of softened butter
- 1 egg (divide the yolk and white)
- 1/4 cup / 50g of sugar
- Pinch of sea salt
- 1 cup / 150g of flour
- 1 cup / 100g of chopped nuts
- Salted caramel
- Melted dark chocolate
METHOD:

In a bowl, mix together the butter, egg yolk, sugar, and salt.

Add the flour and mix. Roll into a ball.

Chill for 30 minutes.

Remove from refrigerator. Divide the dough and roll into 1-inch balls.

Dip each ball in egg yolk, and then roll in chopped nuts.

Place on baking sheet (lined with parchment paper), and press your thumb into the center.

Bake at 340°F/170°C for 12 minutes, or until golden.

Remove from oven and let cool.

Pour the salted caramel into the center groove,and drizzle with dark chocolate.
