Apple Butter

- 4 lb tart apples
- 2 cups granulated sugar
- 3 tbsp lemon juice, fresh or bottled
- 1 tsp cinnamon

Preparation
Step 1
Remove stems and blossom ends from the apples before cutting into quarters. Place in large pot including seeds, core and peeling. Add sugar, lemon juice and cinnamon. Stir. Let stand until apples release some juice. Cover. Heat slowly. Bring to a boil. Cook uncovered on low heat, stirring often, until apples are tender. Press through food mill.
Step 2
This may be cooked in large pot on top of stove, stirring often. To test for doneness, cool a teaspoon on a chilled plate. It should stay smooth.
Step 3
Pour into hot sterilized jars to within 1/4 inch of the top. Seal.
Step 4
Bake pulp in uncovered roaster, 325 degrees, stirring every 30 minutes until thick, about 2 to 2 1/2 hours.

Chef Tips and Tricks
Sweet Apple Cinnamon Rolls
1 apple
Pie crust dough
1/8 cup brown sugar
1/8 cup almond powder
1/2 tsp cinnamon
Egg yellow(s)
Milk
1. Halve an apple and slice each half finely.
2. Cut the top of a pie crust to get a straight edge.
3. Spread the brown sugar and almond powder all over the dough.
4. To get the first row, line up the apples in a straight line and cut out the section. Continue until all the dough is all used up.
5. Mix egg yellow and milk and cover each roll with the mixture.
6. If you wish, sprinkle a little extra brown sugar on top of each roll.
7. Bake in the oven for 18 min at 350° F.
