This is a lovely recipe of chopped spinach and cranberries. The jewel tones of this dish are one of the things my son loves about 'Popeye Loves Berries'. He is 5 now and still considers it one of his favorite foods.

  • 3/4-1c. chopped spinach
  • 1 large handfull fresh or frozen cranberries
  • 1 tsp. wheat germ or ground flax seed
  • optional: "sprinkles"

Preparation

Step 1

Put frozen spinach in a microwavable bowl. Quarter fresh or still frozen cranberries and add to spinach.

Step 2

Microwave for 1.5 min stirring half way through cooking time.

Step 3

Let your tot sprinkle on the wheat germ or flax seed for an extra boost of nutrition and fun.

The earthy spinach and tart berries are a great combination! If you are making this for a younger baby, blend in a food processor for a smoother texture.

I buy bags of cranberries and put them in the freezer for when they are out of season.
