Ingredients
- 2 tsp oil
- 4 small chicken breasts
- 2 cups frozen broccoli thawed
- 1 can condensed cream of chicken soup
- 4 oz velveeta
- 2 cups hot cooked white rice

Preparation
Step 1
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165°F). Remove chicken from skillet; cover to keep warm.
Step 2
Add broccoli, soup and VELVEETA to skillet; mix well. Cook on medium heat 7 min. or until VELVEETA is melted and sauce is heated through, stirring frequently.
Step 3
Serve chicken and broccoli mixture over rice.

INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
