VEGAN LOBSTER BISQUE

This is a veganized version of my mom's lobster bisque. It is very rich and decadent.

Ingredients

  • 1 sweet onion, diced
  • 1 cup shitakii mushrooms, chopped
  • 2 cans condensed green pea soup
  • 2 cans condensed bisque of tomato soup
  • 1 can coconut milk
  • 2 1/2 cups vegan whipping cream
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 sheet Nori seaweed, crumbled
  • 1 tsp soy sauce
  • 1 tsp red wine vinegar
  • 1 tsp red wine
  • 1/2 tsp molasses
  • 1 pkg vegan scallops, diced
  • 2/3 cup dry sherry

Preparation

Step 1

Saute onions and mushrooms in vegan margarine until caramelized. Pan fry vegan scallops in vegan margarine.

Step 2

Combine all ingredients except scallops and sherry. Bring to a boil. Stir in vegan scallops and sherry, cook 10 minutes.
