VEGAN LOBSTER BISQUE

This is a veganized version of my mom's lobster bisque. It is very rich and decadent.

Ingredients
- 1 sweet onion, diced
- 1 cup shitakii mushrooms, chopped
- 2 cans condensed green pea soup
- 2 cans condensed bisque of tomato soup
- 1 can coconut milk
- 2 1/2 cups vegan whipping cream
- 1 tsp salt
- 1/2 tsp pepper
- 1 sheet Nori seaweed, crumbled
- 1 tsp soy sauce
- 1 tsp red wine vinegar
- 1 tsp red wine
- 1/2 tsp molasses
- 1 pkg vegan scallops, diced
- 2/3 cup dry sherry

Preparation
Step 1
Saute onions and mushrooms in vegan margarine until caramelized. Pan fry vegan scallops in vegan margarine.
Step 2
Combine all ingredients except scallops and sherry. Bring to a boil. Stir in vegan scallops and sherry, cook 10 minutes.
