Shrimp & Parmesean Grits

By Sodernsilly
Preparing the grits In a small saucepan, add 1 cup of water and bring to a boil
- For the shrimp:
- 6 to 8 regular sized shrimp, peeled and deveined and chilled
- 1 to 2 strips of bacon
- about 1 tsp pan searing flour (reg. flour will also work)
- 1 heaping tbsp shallot, chopped
- 1 heaping tbsp green onion, chopped
- 1 clove garlic, chopped
- 2 tbsp butter
- ½ lemon, juiced
- 1 tbsp good extra virgin olive oil
- 1 tsp dried parsley
- chili powder to taste
- granulated garlic (or garlic powder) to taste
- onion powder to taste
- lemon pepper seasoning to taste
- cayenne pepper to taste
- Old Bay seasoning to taste
- kosher salt to taste
- freshly ground black pepper to taste
- For the grits:
- 1 cup water
- 3 tbsp heavy cream
- 3 to 4 heaping tbsp quick grits (the 5 minute kind)
- 4 tbsp butter
- ½ tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup grated parmigiano-reggiano
- Dash of: granulated garlic (or garlic powder), cayenne pepper, onion powder, Old Bay seasoning, lemon-pepper seasoning
Cheeseburger Soup

In a large deep skillet brown ground turkey and ground sausage
- 1 lb ground turkey (could use other ground meat)
- ½ lb ground turkey sausage (could use other ground sausages)
- 6 tablespoons butter, divided
- 1 cup diced onions
- 1 cup diced carrots
- 1 cup diced celery
- 3 cups russet potatoes peeled and diced into small cubes
- 3 cups chicken broth
- 1 Tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 5 Tablespoons flour
- 1 cup whole milk, warmed
- 1 cup heavy cream, warmed
- 3 cups sharp cheddar cheese, shredded (can use a mixture of cheeses if desired. I like smoked cheddar and sharp cheddar)
- Toppings: shredded cheese, fresh parsley, chopped bacon, dice tomatoes, cheese, pickles, buttered croutons.
Roasted Butternut Squash Soup w/ Chicken Meatballs

Preheat oven to 425. Place butternut squash on a baking pan lined with parchment paper
- SOUP
- 3½ lb butternut squash (4 cups roasted)
- 2 cups chicken broth
- 1 cup white onions, diced
- 2 cloves garlic, minced
- ¼ cup heavy whipping cream
- ½ teaspoon black pepper
- ½-1 teaspoon salt
- ¼ teaspoon sage
- MEATBALLS
- 1 lb ground chicken
- 2 tablespoon fresh minced onion
- 3 cloves garlic, minced
- 1 egg
- ½ cup plain panko
- 2 teaspoon extra virgin olive oil
- ½-1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon sage
- ½ teaspoon oregano
- ½ teaspoon paprika
- ⅛ teaspoon all spice
- ½ teaspoon whole thyme
- 2 tablespoon parsely
Peach Lemonade

In a large saucepan over medium heat, add diced peaches, lemon zest, sugar and 2 cups of water
- 3 cups fresh peaches, diced (about 6 peaches)
- Zest of 3 lemons
- 1½ cups sugar
- 6 cups cold water or sparkling water, divided
- 1 cup fresh lemon juice (juice of about 7 lemons)
- Garnish (peach slices, lemon slices, mint)
Strawberry Cobbler

Preheat oven to 375. In a medium bowl, add strawberries and ¾ cup sugar
- 3 cups fresh strawberries, diced
- ½-3/4 cup sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup sugar
- 1 cup milk
- ½ teaspoon vanilla extract
- 1 stick butter, meltedl
Cream Cheese Pound Cake

Cream together butter and cream cheese
- (all ingredients should be room tempt)
- 3 sticks real butter (unsalted)
- 8 oz cream cheese
- 6 large eggs
- 3 cups sugar, sifted
- 3 teaspoons vanilla extract
- 2 teaspoons lemon extract
- 3 cups cake flour (can use all-purpose flour if you sift it really well)
- ½ teaspoon baking powder
Chipotle Lime Chicken Drummettes w/ Avocado Sauce

Brush wings with mayonnaise
- 20 fresh chicken drummettes or wings
- ¼ cup mayonnaise
- CHIPOTLE SEASONING RUB
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 1½ teaspoons chili powder (can more if desired)
- ½ teaspoon black pepper
- ½ teaspoon Old Bay w/ Blackening seasoning (optional, but yum!)
- 2 teaspoons chipotle powder (add more if you like heat)
- 1½ teaspoons garlic powder
- 1 teaspoon onion powder
- ¾ teaspoon paprika
- ½ teaspoon cumin
- Juice of 1 lime
- Fresh cilantro, garnish
- AVOCADO SAUCE
- 1 avocado
- 5 Tablespoons sour cream
- 2 Tablespoons fresh cilantro, chopped
- 3 cloves of garlic, minced
- Juice of 1 lime
- salt and pepper, to taste
Skillet Cornbread

Add butter to 9 inch cast iron skillet and place into the oven
- 1 ½ cup White Lilly all-purpose flour
- 1 cup pure yellow corn meal (not the mix)
- 1 Tablespoon baking powder
- 1 teaspoon salt
- cup sugar *optional*
- 1 ¼ cup buttermilk
- 2 eggs, beaten
- cup vegetable oil
- 3 tablespoon butter-flavored shortening, melted
- 1 tablespoon butter or bacon fat (for skillet)
Candied Sweet Potatoes

- 2 cups white sugar
