Pear Apricot Jam

Ingredients
- 2 1/4 lbs of pears,
- 2 2/3 cup sugar
- 5 oz dried apricots
- Some candied orange peel.

Preparation
Step 1
-Soak the dried apricots in water (an hour or two).
-Wash and peel your pears.
-Cook over low heat for fifteen minutes by adding water.
Step 2
-Reserve the cooking liquid (around 4 cups preferably), add sugar and dissolve. -Add apricots and candied orange peel. -Simmer for ten minutes. Add the pears and cook gently.
