- 4 carrots,
- 6 tablespoons olive oil
- 4 tablespoons Melfor vinegar,
- 2 teaspoons wheat germ powder
- 1 tablespoon chopped fresh mint,
- 2 teaspoons sesame seeds
- 1 large pinch of salt

Preparation
Step 1
Peel and grate the carrots.
Step 2
Then prepare the dressing by mixing olive oil, the Melfor vinegar, salt and wheat germ.
Step 3
So just mix carrots and dressing and top with sesame seeds for extra crunch.
Step 4
Cool and refrigerate 10 minutes before serving.

METHOD
- Lightly sautée the peanuts until golden.
- Take the carrots and cut into thin slices.
- Peel the mango and slice into thin strips.
- Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
- In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
