- Skinless Boneless Chicken
- 1 can Artichokes
- 3/4 C shredded Parmesan
- 3/4 C Mayo
- dash of garlic powder
- dash of salt
- dash of pepper

Preparation
Step 1
Drain and chop Artichokes
Step 2
Preheat oven to 375
Step 3
in medium bowl mix all ingredients except chicken
Step 4
place chicken in greased baking dish and cover evenly with artichoke mixture
Step 5
bake uncoveedr for 30 minutes or until chicken is no longer pink
Step 6

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
