Polynesian Meatball & Pineapple Skewers
A fun way to bring the taste of the tropics to your home, these peanut studded meatballs are skewered with pineapple and brushed with sweet & sour sauce. A family favorite for sure!
Ingredients
- 1 beaten egg
- 1/4 cup fine bread crumbs
- 2 tbsp fresh cilantro
- 2 cloves minced garlic
- 1/4 tsp salt
- 1/8 tsp ground red pepper
- 1 lb hamburger
- 1/4 cup finely chopped peanuts
- 1 20oz can of pineapple chunks
- 1 1/4 cups bottled sweet & sour sauce

Preparation
Step 1
In a mixing bowl combine egg, bread crumbs, parsley, garlic, salt, and red pepper, hamburger & peanuts. Mix well
Step 2
Shape into 36-40 meatballs, place in a baking dish & bake in a 350 degree oven for 25 minutes or until no longer pink
Step 3
Thread a meatball and a pineapple chunk onto a toothpick and return to the baking pan. Repeat with the remaining fruit & meatballs. Brush with some of the sweet & sour sauce and continue baking 5-8 minutes until heated through
Recipe can be doubled for a cookout or party appetizer
