A steaming roaster full of the melding smells and flavors of rock, onions, potatoes, fat back, tomato soup, and bacon

  • 3-4 lbs rock/ Striped Bass
  • 1/2 lb fat back
  • 4lb potatoes
  • 3 medium onions
  • 12 strips bacon
  • 5 cans Campbells tomato soup

Preparation

Step 1

In large roaster lay out on bottom fat back. Peel and slice potatoes and put in a layer of potatoes then thinly sliced onion, then a layer of fish. Salt and pepper at this level then repeat until the roaster is full.

Step 2

Add all 5 cans of tomato soup and enough water to bring it almost covering your last layer. Place bacon strips across the top.

Step 3

Cover put in preheated oven at 375 and bake for 45 minutes
