Ingredients

  • 3 c. all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 3 tsp. ground cinnamon
  • 3 eggs
  • 1 c. veg. oil
  • 2 1/4 c. white sugar
  • 3 tsp. vanilla
  • 2 c. grated zucchini
  • 1 c. chopped walnuts

Preparation

Step 1

Preheat oven to 325

Step 2

grease and flour 2 8x4 pans

Step 3

sift flour, salt, baking powder and soda, and cinnamon in a bowl.

Step 4

beat eggs, oil, vanilla, and sugar in a bowl.

Step 5

add sifted ingredients into creamed ingredients and beat well.

Step 6

Stir in zucchini and nuts until blended well.

Step 7

pour batter into pans. bake for 40-60 mins or until tester comes out clean.

Step 8

Cool for 20 mins.

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
