Ingredients
- 2 cups butter or margarine
- 2 1/2 cups icing sugar
- 3 Tablespoons vanilla
- 2 eggs
- 5 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- Icing:
- 1 egg
- Almond Extract
- Icing Sugar

Preparation
Step 1
Cream butter or margarine and icing sugar. Add vanilla and eggs and mix.
Step 2
Combine flour, baking soda and salt in a separate bowl. Blend into creamed mixture. I use my kitchenaid mixer to do the mixing for me.
Step 3
Divide dough in 1/2 and chill.
Step 4
Roll out and cut with cookie cutters.
Step 5
Place on cookie sheet and bake at 350 degrees F. for 8 to 12 minutes, until lightly browned.
Step 6
Let cookies cool. thoroughly before icing.
Step 7
ICING
Beat 1 egg white until foamy.
Step 8
Add 1 teaspoon almond extract (may use vanilla if desired) and enough icing sugar to get desired consistency (should be thin enough to dip cookies). Color if desired with food coloring.
Step 9
Dip cookies 1 at a time in icing and let excess drip back into bowl. Place cookies on cooling rack for icing to dry.

Chef Tips and Tricks
These salted caramel thumbprint cookies are easy to make and super delicious!
INGREDIENTS:
- 1/4 cup / 50g of softened butter
- 1 egg (divide the yolk and white)
- 1/4 cup / 50g of sugar
- Pinch of sea salt
- 1 cup / 150g of flour
- 1 cup / 100g of chopped nuts
- Salted caramel
- Melted dark chocolate
METHOD:

In a bowl, mix together the butter, egg yolk, sugar, and salt.

Add the flour and mix. Roll into a ball.

Chill for 30 minutes.

Remove from refrigerator. Divide the dough and roll into 1-inch balls.

Dip each ball in egg yolk, and then roll in chopped nuts.

Place on baking sheet (lined with parchment paper), and press your thumb into the center.

Bake at 340°F/170°C for 12 minutes, or until golden.

Remove from oven and let cool.

Pour the salted caramel into the center groove,and drizzle with dark chocolate.
