Garam Massala Curried Chicken

- 3 lbs chicken cut up
- 2 tbsp vegetable oil
- 2 medium onion chopped
- 4 cloves garlic - minced
- 3 tbsp curry powder
- 1/2 tbsp garam massala
- 1 tsp salt or to taste
- Pepper

Preparation
Step 1
Wash chicken pieces set aside. Heat oil in pan fry onion and garlic until tender. Add curry powder, garam massala, salt and pepper. Cook for about 3 min. Add chicken and mix thoroughly cook on medium heat for 10 min. Stir occasionally. Add 1 cup Hot water, cover and let simmer until chicken is tender. Serve with cooked rice.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
