I grew up loving girl scout cookies. These cookies are similar to girl scout cookies.

Ingredients

  • COOKIES
  • 2 cups AP flour
  • 1 1/2 tsp baking powder
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 cup vegan margarine
  • 1/4 cup coconut milk
  • 5 tbsp vanilla yogurt
  • 1 tsp vanilla extract
  • 2 cups sweetened coconut, toasted
  • 1/2 cup condensed milk
  • 1/4 tbsp vegan margarine
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 1/2 cup chocolate chips

Preparation

Step 1

Combine dry ingredients. Combine wet ingredients. Stir wet ingredients into dry ingredients. Preheat oven 350*F. Make dough into shapes. Bake 20 minutes.

Step 2

In a pot, combine margarine and sugars. Boil 3 minutes. Add condensed milk, boil 8 minutes until a softball forms in ice water. Remove from heat and add extracts.

Step 3

Dip cookies in caramel. Sprinkle with toasted coconut. Cool on ggreased wax paper in refrigerator for 30 minutes.

Step 4

Melt chocolate chips. Coat bottom of cookies. Make zigzag across the top. Chill in refrigerator.
