Ingredients
- 2 pounds Cooked Salad Shrimp, rinsed & drained
- 2 Cups Panko Bread Crumbs
- 1 Shallot, minced
- 1/4 Cup Diced Red Bell Pepper (or Pimentos)
- 1/4 Cup Diced Green Bell Pepper
- 1/2 Cup mayonaise
- 1 Egg
- 1 TBL Old Bay Seasoning
- Oil for Frying
- Parsley - Garnish
- Capers - Garnish

Preparation
Step 1
Combine all ingredients in a large bowl. Form equal sized patties, place on sheet pan and partially freeze.
Step 2
Heat enough oil to shallow fry in pan to 375 f. Place patties, a few at a time in pan. When slightly browned, gently turn over. Drain on paper towels
Garnish with fresh parsley, Capers . Serve with Shrimp (cocktail) sauce and or Tartar sauce and lemon wedge.

Slice pepper and place slices in the toaster
Mix Tzatzíki and shrimp
