Brown Fried Rice

Fried rice is a great way to make use of spare leftovers in the fridge. It makes a great side dish to chicken or beef, or brown them separately and mix them in for an excellent and quick lunch or dinner!

Ingredients
- 3 Tablespoons Coconut Oil
- 4 Cups Brown Rice, cooked
- 1½ Teaspoon Soy Sauce
- 2 Eggs, slightly beaten
- ¼ Teaspoon Fresh Ground Pepper
- Optional:
- ¼ Cup Scallions, chopped
- ¼ Cup Corn
- ¼ Cup Peas
- ¼ Cup Green Beans
- ¼ Cup Carrots, chopped
- ¼ Cup Bell Pepper, chopped

Preparation
Step 1
Heat the oil in a large skillet, and add the rice, soy sauce, pepper and optional ingredients. Cook over medium-high heat, stirring often for about 6 minutes.
Step 2
Add the eggs and stir briskly so they cook and break into small bit throughout the rice. As soon as the egg is set, remove and serve.
If you choose to include carrots or corn, they should be eaten in smaller quantities, avoided later in the day.
