Ingredients
- 3 skinless and boneless chicken breast
- 1 package of medium egg noodles
- 8-10 large potatoes
- 2 cans of corn
- 1 container of chicken broth
- Pour chicken broth into large soup pot
- Cut up chicken breast into cubes
- Place in chicken broth
- Peel and cube the potatoes
- Cook for 1 hour over medium heat
- Add potatoes and corn
- Cook over medium heat for another 45 minutes or until potatoes are tender
- Add the noodles and turn down to simmer
- Ready when noodles are tender
- Add salt and pepper to taste

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
