An unwavering appreciation for sunshine, white sand beaches, chicken roti and pelau are all thanks to my Caribbean heritage. In fact, it is my fond familiarity with the flavor-infused Caribbean cuisine, that has forever corrupted my ability to enjoy anything that is remotely bland or poorly seasoned.  My Grandad’s homemade pepper sauce remains the most prized possession in any care package.  And it is the only condiment that has ever been allowed to grace the dining room table.  (As according to my Mother adding salt, pepper or ( God forbid) ketchup is a Caribbean sacrilege, a  disrespect worthy to only an amateur cook or a fast food establishment.)

What happens when you layer rice pudding and dulce de leche in mason jars? Sweet, sweet magic!

INGREDIENTS

  • 1 Cup of rice
  • 2 Cinnamon sticks
  • 7 Cloves
  • 4 Cups of milk
  • 1 Cup of sweetened condensed milk
  • Dulce de leche

Powdered cinnamon

METHOD

  1. In a saucepan, combine the rice, cinnamon sticks, cloves, and milk, and simmer.
  2. Add the sweetened condensed milk, stir, and simmer for a few more minutes. Remove from heat.
  3. In a mason jar, layer the rice pudding and dulce de leche, and top with a sprinkling of powdered cinnamon. 
  4. Enjoy!

This is a sweet and spicy tropical twist on a shepherd's pie

  • POTATO LAYER
  • 1 lg potato, cubed
  • 1/3 cup nutritional yeast

  • VEGETABLE LAYER
  • 1/2, sweet onion, diced
  • 4 banana peppers
  • 1, scotch bonnet, minced
  • 1 tbsp garlic, minced
  • 1 pkg veggie ground
  • 1 carrot, diced
  • 1/2 cup green beans, 1/2 inch segments
  • 1 sm can crushed pineapples, drained
  • FAUX MEAT
  • 1 cup frozen corn, thawed
  • 2/3 cup shitake mushrooms
  • 2/3 cup condensed cream of mushroom soup
  • DOUGH
  • 1 cup cornmeal
  • 3/4 cup AP flour
  • 2/3 cup sugar
  • 4 tsp baking powder
  • 1 tsp garlic salt
  • 3/4 cup soymilk
  • 1/4 cup vegan margarine, soft

  • Caribbean 3 peppers (different colors if possible)
  • 1 red pepper
  • 1 knob of butter
  • 1 teaspoon of olive oil
  • 1 pinch of turmeric
  • 1 pinch paprika
  • 1 pinch of cinnamon
  • 1 tbsp of honey
  • 1 onion
  • Salt and pepper
