Pumpkin Cheesecake

A delicious cheesecake made from scratch that has the consistency of a cheesecake but tastes like a pumpkin pie
- Crust
- 1 sleeve of honey graham crackers plus 2 more individual crackers.
- 3 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1 1/2 sticks melted butter (Healthy alternative:3/4 cup butter substitute)
- Filling
- 3 (8 ounce) packages of low-fat cream cheese
- 1 (15 ounce) can of pumpkin puree
- 3 eggs plus one egg yolk
- 1 1/2 cups sugar (Healthy alternative: 1 1/2 cups Splenda or sugar in the raw)
- 1/4 cup low-fat sour cream
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 2 tablespoons flour (Healthy alternative: 2 tablespoons whole wheat flour)
- 1 teaspoon vanilla extract (optional)

American Sweet Potato Pie

INSTRUCTIONS
Preheat oven to 325 degrees
- 1 (9-inch) pie crust
- 2 large eggs, beaten
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon finely grated lemon zest
- 1 1/2 cups sweet potato puree (from 2 large cooked sweet potatoes)
- 3/4 cup heavy cream
- 3/4 cup milk

- 1 pound Italian Sausage (you could also use bacon)
- 1 cup mushrooms chopped and sauteed
- 1/2 cup chopped tomatoes
- 1 red onion chopped and sauteed
- 8 large eggs
- 1/4 cup milk (or half and half depending on how you’re feeling that day)
- 1/2 tbsp vegetable oil
- 1/2 tsp baking powder
- salt and pepper to taste
- Freshly grated Parmesan Cheese as needed
