- 1 Tbsp. flour
- 1 cup tawny Port
- 1 cup chicken stock
- 2 Tbsps. balsamic vinegar
- 2 Tbsps. butter

- Spice Rub:
- 1/2 cup brown sugar
- 1/4 cup salt
- 1/8 cup each of chili powder, cumin, black pepper, cayenne pepper, ground ginger, garlic powder, and Hungarian paprika
- Pork:
- 8 lb bone in pork shoulder
- 2 1/2 cups orange juice
- 2 tbsp honey
- corn tortillas
- Apple Slaw:
- 1/2 savoy cabbage
- 1 medium sized carrot
- 3 granny smith apples
- 3/4 cup mayonnaise
- 4 tbsp apple cider vinegar
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp celery seeds
- 2 tbsp sugar
