- Shortbreads:
- 1 c. butter, room temperature
- ½ c. sifted powdered sugar
- 2 c. all purpose flour
- 1/8 tsp salt
- 1 tsp vanilla extract
- ½ tsp coconut extract
- 2 c. flaked coconut
- Filling:
- ¾ c. key lime juice
- 2 egg yolks
- ¾ c. granulated sugar
- 2 TBSP cornstarch
- 4 oz white chocolate
Spiced Orange Flan with Pineapple Crumb topping

Similar to a traditional flan, except this custard is spiced with clove, cinnamon, nutmeg, and oranges
- 4 eggs
- 1 can sweetened condensed milk
- 1 c. milk
- Rind from 1 lemons
- Rind from 2 navel oranges
- 3 cloves
- 3 cinnamon sticks
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 1 tsp orange extract
- 1 c. mandarine oranges, drained & chopped
- 1 c. crushed pineapple, drained & squeezed dry
- 3/4 c.plain flour
- 1/4 c. dark brown sugar
- 1/4 c. melted margarine or butter
- 1 tsp ground cinnamon
- 2 navel orange sliced--garnish
- 4 cinnamon sticks--garnish
Dark Chocolate Caramel Macchiato Tarts

A personal size tart that combines milk chocolate, dark chocolate, caramel, and espresso
- Dark Chocolate Shortbread:
- 2c all purpose flour
- ¼ tsp salt
- 1 c. butter, room temperature
- ½ c. powdered sugar
- ¼ c. Special Dark Cocoa
- 2 tsp. vanilla extract
- 2 TBSP milk
- Dark Chocolate Truffle:
- 8 oz cream cheese, room temperature
- 2/3 c. powdered sugar
- 8 oz. dark chocolate
- ¼ c. cold espresso ( ¼ c. water & 2 tsp instant coffee)
- 1 jar caramel ice cream topping
- Milk Chocolate Cream:
- 8 oz. cream cheese, room temperature
- 2/3 c. powdered sugar
- 8 oz. milk chocolate
- 3/4 c. Cool Whip
- Whipped Cream:
- 1 ½ c. heavy cream
- 1 tsp vanilla extract
- ¾ c. powdered sugar
- Garnish:
- Remaining Caramel Ice Cream Topping
- 5 Kraft caramels--cut into pieces
- chocolate covered espresso beans
