  • 1/2 teaspoon chili powder
  • For the Sambar
  • 1/2 cup yellow or red lentils
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon tamarind concentrate
  • 1 Tablespoon vegetable oil
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon fenugreek seeds
  • 1/8 teaspoon asafetida
  • 2 cups water
  • 1 1/2 teaspoons salt
  • 1 Tablespoon Sambar Masala spices
  • 1 potato peeled and cut into cubes
  • 1 cup tomatoes chopped
  • 1 cup onion chopped
  • 1/2 cup green beans cut into 1 inch lengths
  • 1 serrano or jalapeno chile diced
  • 6 sprigs cilantro
  • 10 curry leaves (or 2 bay leaves)
  • For the Potato Masala
  • 3 Tablespoons vegetable oil or ghee
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 2 small dried hot peppers
  • 1 onion diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric
  • pinch asafetida
  • 1 Tablespoon ginger grated
  • 6 curry leaves
  • 4 garlic cloves
  • 4 garlic cloves minced
  • 2 small green chiles finely chopped
