Almond, ginger crust with mild orange and Metaxa flavours
- filling:
- 3 boxes 250g cream cheese bricks
- ¾ cup sugar (or ½ cup sugar and ¼ cup of honey)
- 2 tbsp. vanilla or lemon juice
- 1 tbsp grated orange rind
- 1 shot of Metaxa
- ½ tsp salt
- ½ cup sour cream or yogurt (drained in a cheesecloth)
- 2 tbsp flour, or 2 tbsp cornstarch
- 3 eggs
- crust:
- 1 1/2 cups of crushed gingersnap cookies
- ¼ cup melted butter
- ¼ to ½ cup roasted almonds

- 1 (1/4 ounce) package dry yeast
- 1 cup warm whole milk
- 1/2 cup granulated sugar
- 1/3 cup margarine (or 80% margarine 20% butter spread)

- 3/4 cup bread flour

- 375g flour
- 300g margarine or unsalted butter
- 75g icing sugar
Apple Upside-Down Cake

- Topping:
- 4 tablespoons (1/2 stick) unsalted butter , cut into 4 pieces, plus extra for pan
- 4 Granny Smith apples or Golden Delicious (about 2 pounds), peeled and cored
- 2/3 cup packed light brown sugar (4 2/3 ounces)
- 2 teaspoons juice from 1 lemon
- Cake:
- 1 cup unbleached all-purpose flour (5 ounces)
- 1 tablespoon cornmeal (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 3/4 cup granulated sugar (5 1/4 ounces)
- 1/4 cup packed light brown sugar (1 3/4 ounces)

- 6 tablespoons (3/4 stick) unsalted butter , melted and cooled slightly

- 3 tbsp cocoa
- 1/3 cup shortening
- 1 cup sugar
- 2 eggs, well beaten
- ½ cup flour
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp vanilla
- 1 cup nuts, chopped
Carrot Cake

Cake: Combine all ingredients
- Cake:
- 2 cups flour
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- ½ tsp salt
- 4 eggs
- ¾ cup vegetable oil
- ¾ cup sugar
- 2/3 cup brown sugar
- ½ cup orange juice
- ½ cup marmalade
- 3 cups grated carrots
- Icing:
- 1 package cream cheese
- 2 tbsp lemon juice
- ½ lemon rind, grated
- ¼ cup sugar

Adjust oven rack to lower-middle position and heat oven to 325 degrees
- 5 large eggs, separated (see note)
- 1 teaspoon cream of tartar
- 1 1/2 cups sugar
- 1 1/3 cups plain cake flour
- 2 teaspoon baking powder
- 1/2 teaspoon Salt
- 3/4 cup water
- 1/2 cup vegetable oil
- 1 tablespoon vanilla extract

- 2 cans condensed milk
- 1 can evaporated milk
- 4 eggs
- 1 tsp vanilla
- 1 tbsp cornstarch (dissolved)

French Pie Crust

- 120 g unsalted butter/room temperature, diced (4 ½ oz)
- 75 g (3 oz) icing sugar sifted
- 3 egg yolks
- 250 g (9oz) flour

Oatmeal Cookies

Adjust the oven racks to the upper and lower middle positions: heat the oven to 350 degrees
- 1 ¼ cup all purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- 1/2 teaspoon salt
- 1 ¼ cup rolled oats
- 1 cup pecans (toast at 350 for 8 minutes, then chop)
- 1 cup dried sour cherries, chopped course
- ¾ cup bittersweet chocolate, chopped into chunks
- 12 tablespoons unsalted butter, softened but sill cool
- 1 ½ cup packed dark brown sugar
- 1 large egg 1 teaspoon vanilla extract
