Italian Wedding Soup

In a medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls
- 1/2 lb. turkey/lean meat
- 1 egg, lightly beaten
- 2 tablespoons dry bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1/2 tsp. dried basil
- 1/2 tsp onion powder
- 6-7 cups of chicken broth
- 2 cups thinly sliced escarole or spinach
- 1/2 cup uncooked orzo
- 1/3 cup finely chopped carrots
Oven Roasted Potatoes

Preheat oven to 425 degrees
- 1/8 - 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1/2 tsp. dried basil
- 1/2 tsp. dried marjoram
- 1/2 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1/2 tsp. dried parsley
- Salt and pepper to taste
- 4 - 5 large potatoes, peeled and cubed
- Optional: Parmesan cheese, sprinkle of crushed red pepper
