Apple Crisp

By Merjimjan
Preheat oven to 350 degrees
- 10 cups apples, peeled cored and sliced
- 1/4 cup sugar
- 1 Tbsp flour
- 1 tsp cinnamon
- 1/4 cup water
- 1 cup quick-cooking oats
- 1 cup flour
- 1 cup packed brown sugar
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup butter melted
Chicken Lettuce Wraps

In a large skillet, cook chicken in 1 Tbsp oil for 3 minutes then drain
- 1-1/2 lbs. boneless chicken breasts cubed
- 1 Tbsp. plus 1-1/2 tsp. canola oil divided
- 3/4 cup chopped mushrooms
- 1 can 8 oz. water chestnuts drained and diced
- 1 Tbsp minced fresh ginger root
- 2 Tbsp rice vinegar
- 2 Tbsp low sodium teriyaki sauce
- 1 Tbsp low sodium soy sauce
- 1/2 tsp. garlic powder
- 1/4 tsp. crushed red pepper flakes
- 1-1/2 cups shredded carrots
- 1/2 cup julienned green onions
- 12 Bibb or Boston lettuce leaves
- 1/3 cup Chow Mein Noodles
Creamed Pearl Onions

- 1 16 oz. pkg. frozen pearl onions
- 4-1/2 tsp. butter
- 4-1/2 tsp flour
- 1/4 tsp salt
- 1/8 tsp nutmeg
- 1/8 tsp garlic powder
- 1/8 tsp pepper
- 3/4 cup milk
- Paprika
Super Green Smoothie

Blend milk or almond milk and ice, banana, avocado, apple, spinach, flax seed and honey in blender until smooth
- 2 cups milk or 1 cup almond milk and 1/2 cup ice
- 1 banana cut in half
- 1/2 avocado pitted and peeled
- 1 cup green apple cored and chopped
- 1 cup spinach
- 3 Tbsp ground flax seed
- 2 Tbsp honey
Vegetarian Chili

- 1 Tbsp olive oil
- 1 cup chopped onions
- 3/4 cup chopped carrots
- 3 cloves garlic minced
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 3/4 cup chopped celery
- 1 Tbsp chili powder
- 1-1/2 cups chopped mushrooms
- 1 28 oz. can whole peeled tomatoes with liquid chopped
- 1 19 oz. can kidney beans
- 1 Tbsp ground cumin
- 1-1/2 tsp dried oregano
- 1-1/2 tsp dried basil

- 1/2 tsp. salt
- 1/2 tsp. Italian seasoning
- 1/2 tsp. crushed red pepper
- 1/4 tsp. black pepper
- 2 tsp. fresh parsley
- 1 cup heavy cream
- 5 - 6 qts. Water
- 16 oz. angel hair pasta
- 4 Tbsp. olive oil
- 12 chicken tenderloins
- 1/2 cup flour
- 1 bell pepper 1 yellow pepper
- and 1 red pepper cut into
- bite - size strips
- 1 chopped red onion
- 2 tsp. minced fresh parsley

Beef Barley Vegetable Soup

Brown meat and put in crockpot to cook until tender ( about 10 hours on high)
- 3 lb. beef chuck roast
- 1/2 cup barley
- 1 bay leaf
- 1 tsp thyme
- 1 tsp marjoram
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp basil
- 2 Tbsp olive oil
- 3 carrots chopped
- 3 stalks celery chopped
- 1 onion chopped
- 1 16 oz. pkg. frozen green beans
- or fresh green beans
- 6 to 8 cups of beef stock
- 1 28 oz. can chopped stewed or diced
- tomatoes
- 1/4 tsp pepper
- Salt to taste
Banana Walnut Oatmeal
