Grilled Eggplant Salad

Light, fresh and lovely salad
- 1 cup grilled eggplant pulp
- 1 green pepper, hot
- 1 large chopped tomato
- 1 small onion chopped
- 2 coves garlic, crushed (optional)
- 1/4 cup chopped parsley
- Salt
Breakfast Egg Souffle

Mix all, pour into a oven proof deep dish pan
- I large tomato, grated or finally chopped
- 1/3 cup feta cheese, broken into very small pieces
- 3-4 eggs beaten
- Punch of oregano or thyme
- 2tbs of cream or half and half
- 2tbs olive oil
- ** do not add salt ( feta has enough salt)

Middle Eastern pulled beef that can be frozen and used in many other ways
- 4 Lbs of beef roast, chuck or round or sirloin, cut into large chunks (the size of small apple)
- *it should not be an expensive cut but a marbled one.
- 3 tsp Salt and 3 tsp black pepper.
- *(if you have time, you could marinate the meat in salt and pepper overnight)
- ½ cup Butter and ½ cup olive oil

- 1 cup long grain rice
- ¼ cup very thin and small egg noodles ( called shaira in Arabic, or can use the Italian orzo shape pasta)
- 4 tbs butter
- 2 cups chicken broth (can use water)

- For the stuffing
- ½ lb ground lamb
- ½ lb ground beef
- 1 cup of short grain rice, wished and drained well
- 6 cloves of garlic minced
- 1 small can of chopped tomatoes and/or the tomato cores which will be emptied out.
- 1 tsp tomato paste
- 1 tsp or more red pepper paste
- 2 tbs of dry crushed mid-oriental mint
- ¼ cup fresh parsley, chopped
- 2 tsp salt
- ½ tsp black pepper
- 3 tbs lemon juice
- This mixture should not be too runny but should have enough liquid to allow the rice to cook.
- 4 lbs of tomatoes or about 10 mid-size ripe tomatoes, it is best if they are almost the same size.
- 4 potatoes , peeled and sliced thick
- Additional juice of 3 lemons , about 1/3 cup
- ½ -¾ cup olive oil

- 2 mid-size eggplants thinly sliced
- 1 large onion sliced
- 2 long green and red peppers, thinly slices
- 1 large can chopped tomatoes, or about 5 ripe roma tomatoes
- 1 small can of tomato sauce, in case of need ( if you are not using ripe tomatoes, they will not produce much sauce, then you can add the tomato sauce to create a juicy sauce.
- 3-4 cloves garlic, crushed
- 1/3 cup fresh basil leaves
- 1 cup Olive oil
- Parmigiano cheese, grated
- ** If you like some heat in your sauce, add chopped hot chillies , red or green while cooking or right into your plate.
- 200-300 grams pasta, penne

- 2 cups shrimp
- 2 large zucchinis, sliced in disks
- 1 large onion , chopped
- 6-8 garlic cloves crushed
- 1 sliced fennel ( optional )
- 8-10 cherry tomatoes cut lengthwise or 1 mid-size tomato chopped
- ¼ cup white wine
- ¼ cup chopped fresh parsley or coriander or both
- 300 grams pasta, penne is good for this one

An appetizer, light and beautiful dish
- 1 large onion
- 1 large can of tomatoes chopped
- 2 tablespoons of tomato paste
- 2-3 Tbs red pepper paste ( as as needed based on how hot you like your food)
- 2 long green peppers ( not bell peppers)
- ¾ cup of med-size Bulgur ( washed quickly and set aside)
- 1 tsp cumin
- Salt to taste
- olive oil
- 1 bunch of spring onions
- ¼ cup chopped Italian parsley
- Lemon juice to taste/ or pomegranate paste ( 1Tbs)
- Romaine Lettuce leaves, from the hearts, washed, dried and kept whole.
